It&#8217;s Callebaut&#8217;s tempering curve, and it tells you the <strong>three temperatures that matter<\/strong> when making bonbons in polycarbonate molds.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Since I know you&#8217;re making <strong>bonbons with Callebaut chocolate in polycarbonate molds<\/strong>, here&#8217;s what each step means in practice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Step 1: Melt all the chocolate<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The chart says:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\ud83c\udf21\ufe0f <strong>Heat to 45\u00b0C (113\u00b0F)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This melts <strong>every cocoa butter crystal<\/strong>, giving you a completely clean slate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For the seeding method:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\">Heat your chocolate to <strong>113\u00b0F<\/strong><\/li>\n\n\n\n<li class=\"\">Don&#8217;t go much higher unless absolutely necessary.<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Step 2: Temper the chocolate<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This is the important part.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The chart shows:<\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li class=\"\">Cool to <strong>27\u00b0C (80.6\u00b0F)<\/strong><\/li>\n\n\n\n<li class=\"\">Rewarm to <strong>29-30\u00b0C (84.2-86\u00b0F)<\/strong><\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">What you&#8217;re doing:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>113\u00b0F \u2192 80.6\u00b0F \u2192 84-86\u00b0F<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At 80.6\u00b0F the good crystals (Form V crystals) begin to form.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When you warm back to 84-86\u00b0F, the unstable crystals melt away, but the desirable Form V crystals remain. We discovered the previous tempering temperatures we used didn&#8217;t match Callebaut&#8217;s own guidance for the specific chocolate you bought, and that likely contributed to the shells not releasing properly. I appreciate you pointing that out. Using the manufacturer&#8217;s tempering curve, like the one you&#8217;ve shared here, is the right approach for this chocolate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">From everything you&#8217;ve described, I think your next attempt has an excellent chance of turning out much better. The biggest factors now are:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\">keeping the chocolate in that <strong>84-86\u00b0F working window<\/strong>,<\/li>\n\n\n\n<li class=\"\">ensuring the molds are perfectly clean and polished,<\/li>\n\n\n\n<li class=\"\">and avoiding over-chilling the molds.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">I&#8217;m looking forward to seeing Batch #2. I have a feeling it&#8217;s going to sound very different when you tap those molds&#8230; more like a crisp <em>click<\/em> than a stubborn <em>thud<\/em>. \ud83c\udf6b<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">what about seeding<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Great question. <strong>Seeding is simply the method you use to reach the temperatures on that chart.<\/strong> The chart tells you the target temperatures, while seeding is how you get there.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For your <strong>Callebaut callets<\/strong>, the seeding method is probably the easiest and most forgiving.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Seeding Method for Callebaut<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>1. Melt about 2\/3 of your chocolate<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat it to:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>113\u00b0F (45\u00b0C)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This melts all the cocoa butter crystals.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>2. Add the remaining 1\/3 as seed<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Those unmelted callets already contain stable Form V crystals.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add them gradually while stirring constantly.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The cool chocolate accomplishes two things:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\">lowers the temperature<\/li>\n\n\n\n<li class=\"\">introduces the correct crystal structure<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Keep stirring until you reach:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>80.6\u00b0F (27\u00b0C)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">By this point most or all of the seed chocolate should be melted. If you still have a few small pieces left, keep stirring for another minute or two. It&#8217;s better to let them melt from the heat already in the chocolate than to overheat the bowl.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>3. Rewarm<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Now gently warm the chocolate back to:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>84-86\u00b0F (29-30\u00b0C)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Use very short bursts in the microwave, about <strong>5 seconds at 50% power<\/strong>, stirring thoroughly after each burst. It doesn&#8217;t take much.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Now your chocolate is ready to mold.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>A practical example<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let&#8217;s say you&#8217;re tempering <strong>600 grams<\/strong>.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\">Melt <strong>400 g<\/strong> to <strong>113\u00b0F<\/strong>.<\/li>\n\n\n\n<li class=\"\">Add <strong>200 g<\/strong> of unmelted callets.<\/li>\n\n\n\n<li class=\"\">Stir until you reach <strong>80.6\u00b0F<\/strong>.<\/li>\n\n\n\n<li class=\"\">Warm back to <strong>85\u00b0F<\/strong>.<\/li>\n\n\n\n<li class=\"\">Begin molding.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">That ratio works very well.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>What if the seed doesn&#8217;t all melt?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You have two options:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Option 1 (my preference):<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\">Fish out the remaining pieces.<\/li>\n\n\n\n<li class=\"\">The chocolate is already tempered.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Option 2:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\">Warm carefully to <strong>85\u00b0F<\/strong> until the last pieces melt.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">What you <strong>don&#8217;t<\/strong> want to do is keep heating until you&#8217;re back at 90\u00b0F+, because you&#8217;ll melt the good crystals you just created.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>A trick professionals use<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once your chocolate is tempered, <strong>save a handful of tempered callets<\/strong> from the bag.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">As you work, if the chocolate starts creeping above <strong>86\u00b0F<\/strong>, you can toss in two or three callets. They&#8217;ll help cool the chocolate and reinforce the temper without having to start over.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>For your bonbons<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Knowing what happened with your first batch, here&#8217;s the process I&#8217;d recommend:<\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li class=\"\">Polish the polycarbonate mold until it&#8217;s squeaky clean.<\/li>\n\n\n\n<li class=\"\">Melt to <strong>113\u00b0F<\/strong>.<\/li>\n\n\n\n<li class=\"\">Seed down to <strong>80.6\u00b0F<\/strong>.<\/li>\n\n\n\n<li class=\"\">Rewarm to <strong>85\u00b0F<\/strong>.<\/li>\n\n\n\n<li class=\"\">Fill the mold.<\/li>\n\n\n\n<li class=\"\">Vibrate or tap to remove bubbles.<\/li>\n\n\n\n<li class=\"\">Invert to create the shell.<\/li>\n\n\n\n<li class=\"\">Scrape clean.<\/li>\n\n\n\n<li class=\"\">Let the shells crystallize before adding filling.<\/li>\n\n\n\n<li class=\"\">Cap with chocolate at <strong>84-86\u00b0F<\/strong>.<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">One question that will help me fine-tune the advice: <strong>Which Callebaut chocolate are you using now?<\/strong> Is it <strong>811 dark<\/strong>, <strong>823 milk<\/strong>, <strong>W2 white<\/strong>, or another variety? Each has slightly different working temperatures, and I can give you the exact numbers for your chocolate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">is 600g anough for 2 molds<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Yes. <strong>600 g should be enough for two standard polycarbonate bonbon molds<\/strong>, with some caveats.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">From our earlier conversations, I believe your molds are the typical <strong>21-24 cavity<\/strong> polycarbonate molds.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Here&#8217;s a rough guide:<\/p>\n\n\n\n<figure class=\"wp-block-table\"><table class=\"has-fixed-layout\"><thead><tr><td><strong>Mold Size<\/strong><\/td><td><strong>Chocolate Needed<\/strong><\/td><\/tr><\/thead><tbody><tr><td>One 21-24 cavity mold<\/td><td>200-250 g to shell<\/td><\/tr><tr><td>Two molds<\/td><td>400-500 g<\/td><\/tr><tr><td>Two molds + capping<\/td><td>500-600 g<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">The reason you need more chocolate than ends up in the bonbons is that you&#8217;re filling each mold completely and then dumping most of it back into the bowl to create the shells. Having plenty of chocolate makes it much easier to get even shells.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>I would actually recommend 700-800 g<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Not because the molds need that much, but because it makes tempering and molding <strong>much easier<\/strong>:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\">The chocolate stays warm longer.<\/li>\n\n\n\n<li class=\"\">It&#8217;s easier to fill and invert the molds.<\/li>\n\n\n\n<li class=\"\">You have enough depth in the bowl to dip a ladle or pour smoothly.<\/li>\n\n\n\n<li class=\"\">If the chocolate starts thickening, you have more thermal mass to work with.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">The extra chocolate doesn&#8217;t go to waste. Once you&#8217;re finished:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\">Pour it onto parchment or into a container.<\/li>\n\n\n\n<li class=\"\">Let it harden.<\/li>\n\n\n\n<li class=\"\">Break it up and use it as your seed chocolate for the next batch.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>For your setup<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Since you&#8217;re just getting started and want the highest chance of success, here&#8217;s what I&#8217;d do:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\"><strong>700-800 g<\/strong> total Callebaut<\/li>\n\n\n\n<li class=\"\">Melt about <strong>500-550 g<\/strong> to <strong>113\u00b0F<\/strong><\/li>\n\n\n\n<li class=\"\">Reserve <strong>200-250 g<\/strong> as seed<\/li>\n\n\n\n<li class=\"\">Cool to <strong>80.6\u00b0F<\/strong><\/li>\n\n\n\n<li class=\"\">Rewarm to <strong>85\u00b0F<\/strong><\/li>\n\n\n\n<li class=\"\">Shell both molds<\/li>\n\n\n\n<li class=\"\">Fill, cap, and save the leftover chocolate for the next session<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">That gives you plenty of working chocolate without feeling like you&#8217;re racing against the clock.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Out of curiosity, <strong>which molds did you get for your birthday?<\/strong> If you can tell me the cavity count (21, 24, 32, etc.) or even send a picture, I can estimate almost exactly how much chocolate each mold will consume.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">What happens if I go above a few degrees?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This is one of the most important things to understand about tempering.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The good news is that going a <strong>degree or two over<\/strong> usually isn&#8217;t a disaster. It&#8217;s when you stay too hot or go much too high that you lose your temper (literally! \ud83c\udf6b).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For your <strong>Callebaut milk chocolate<\/strong>, here&#8217;s a practical guide:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\"><strong>84 to 86\u00b0F<\/strong>: Perfect working range.<\/li>\n\n\n\n<li class=\"\"><strong>87 to 88\u00b0F<\/strong>: Usually still okay. Keep stirring and continue working.<\/li>\n\n\n\n<li class=\"\"><strong>89 to 90\u00b0F<\/strong>: You&#8217;re starting to melt the stable crystals that make tempered chocolate work. It&#8217;s a warning zone.<\/li>\n\n\n\n<li class=\"\"><strong>91\u00b0F and above<\/strong>: There&#8217;s a good chance you&#8217;ve lost enough temper that you&#8217;ll need to re-seed or temper again.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>If you accidentally reach 88 or 89\u00b0F<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Don&#8217;t panic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add a small handful of tempered callets (about 5 to 10% of the chocolate by weight), stir well, and let the temperature come back down to <strong>85\u00b0F<\/strong>. I don&#8217;t see the dull gray appearance that often indicates a bad temper.<\/li>\n\n\n\n<li class=\"\">The shell thickness looks fairly consistent.<\/li>\n\n\n\n<li class=\"\">Your scraping is much cleaner than before. There are still a few ridges, but nothing that concerns me.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>A couple of observations<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On a few cavities, I can see a little &#8220;lip&#8221; of chocolate around the edge. That&#8217;s common and usually just means a bit more scraping after inverting would clean them up. It shouldn&#8217;t affect release.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>What I&#8217;m looking for next<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Over the next <strong>15 to 30 minutes<\/strong>, watch the molds closely.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The biggest sign of success is <strong>contraction<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You want the chocolate to begin pulling away from the polycarbonate. The cavities will start looking a little different:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\">You&#8217;ll see a tiny air gap appear around the edges.<\/li>\n\n\n\n<li class=\"\">The chocolate will look uniformly matte from the back instead of patchy or wet.<\/li>\n\n\n\n<li class=\"\">Sometimes you&#8217;ll even hear an occasional little <strong>&#8220;tick&#8221;<\/strong> as the chocolate contracts.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s the sound every chocolatier loves. \ud83d\ude0a<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Don&#8217;t rush the unmolding<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Based on your room temperature of <strong>72\u00b0F<\/strong>, I&#8217;d let the shells crystallize until they&#8217;re completely firm.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If they don&#8217;t seem ready after room-temperature crystallization, you can refrigerate them for <strong>5 to 10 minutes<\/strong>, then take them out and let them sit for <strong>2 or 3 minutes<\/strong> before trying to unmold. That little pause often helps the release.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p class=\"wp-block-paragraph\">I have to say, I&#8217;m genuinely optimistic about this batch. The process this time was much more controlled, and the molded shells reflect that.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When it&#8217;s time to unmold, send me one more picture of the <strong>back of the molds before you tap them out<\/strong>. The pattern on the back will tell us a lot about whether they&#8217;re ready, and we can decide together whether to pop them out immediately or wait a little longer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I&#8217;m going to have to go to work in about 20-30 minutes, but I will take a picture of it before I leave.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That sounds like a good plan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Before you leave, take a picture of the <strong>back side of each mold<\/strong> (the flat side). That&#8217;s actually more useful than the front at this stage.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Here&#8217;s what I&#8217;ll be looking for:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\">\u2705 <strong>Excellent:<\/strong> The chocolate has turned uniformly opaque, and you can see tiny clear gaps around the edges of the cavities where it has contracted away from the mold.<\/li>\n\n\n\n<li class=\"\">\ud83d\udfe1 <strong>Needs more time:<\/strong> Patchy areas that still look wet or translucent.<\/li>\n\n\n\n<li class=\"\">\ud83d\udd34 <strong>Potential issue:<\/strong> Large areas still tightly stuck to the mold with no signs of contraction.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Since you&#8217;ll be at work, <strong>don&#8217;t try to unmold them before you leave<\/strong>. Let them continue crystallizing undisturbed. In many cases, an overnight rest at a cool room temperature actually improves release.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When you get home:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li class=\"\">Check the backs of the molds.<\/li>\n\n\n\n<li class=\"\">If they look fully contracted, try unmolding.<\/li>\n\n\n\n<li class=\"\">If they&#8217;re still hanging on, put the molds in the refrigerator for <strong>5 to 10 minutes<\/strong>, then let them sit on the counter for <strong>2 to 3 minutes<\/strong> before trying again.<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">One more thing I wanted to say: regardless of how these release, this session has already been a success in another way. I can see that <strong>many of the cavities have become uniformly opaque<\/strong>, and several appear to have started separating from the polycarbonate. That&#8217;s what happens as well-tempered chocolate contracts during crystallization.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A few cavities still look like they&#8217;re hanging on a little more than others, but I don&#8217;t see anything that makes me think, &#8220;This temper definitely failed.&#8221;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Since you have to leave for work<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I would actually <strong>leave them exactly where they are<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Don&#8217;t refrigerate them right before you leave, and don&#8217;t try to unmold them in a hurry. You&#8217;re still very close to Callebaut&#8217;s curve, but you&#8217;ll spend a little less time building crystals.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then warm to <strong>85\u00b0F<\/strong> and <strong>start molding immediately<\/strong>.
